Sticks‘n’Sushi coming to Paradise Birmingham later this year
Award-winning Danish-Japanese restaurant Sticks‘n’Sushi will be opening at Paradise later this year as the estate’s newest hospitality offering.
Set to open this autumn, the group will be taking a 6,392 sq ft unit on the ground floor of Three Chamberlain Square, facing onto the new public realm on Paradise Street.
The new operator will be the first leisure venue at Three Chamberlain Square, a building with a unique, low carbon design, and accreditations that underlines its holistic commitment to sustainability and workplace wellbeing. It will bring a whole new offering to the city and the Paradise estate, which is already home to Dishoom, Albert’s Schloss, Rosa’s Thai, F1®Arcade, La Bellezza, and Cow & Sow.
Founded in 1994 by half-Japanese, half-Danish, brothers Jens and Kim Rahbek, and Thor Anderson in Copenhagen, SticksʹnʹSushi is one of Denmark’s most established and respected restaurant groups – with sites in Denmark, Germany and the UK. The group have recently announced they will open in Prague later in the year as part of their international expansion overseas.

Guests can expect sharing dishes of sushi, sashimi, salads and grilled sticks; available à la carte or in generous set menus, for both dine in and takeaway. Popular dishes include Beef Tataki, beef fillet with miso aioli, truffle ponzu and artichoke crisps and Temaki Setto, DIY sushi rolls with lobster, wagyu tartare and avocado. From the grill, highlights come in the form of Gindara No Miso, miso-glazed black cod, Iberico Secreto; miso-cured black Iberian pork, and Ramu Niku, lamb with garlic butter, spring onion and soy sauce.
The drinks list will include sake, Japanese teas, cocktails, premium spirits and beer, including the brand’s recent collaborative Japanese rice lager with Danish brewery Mikkeller.
Designed by Danish practice OEO Studio – known for its work on Noma Kyoto, and more recently, Sticks’n’Sushi Tivoli Gardens, Copenhagen – the space will draw on Japanese architectural principles while incorporating Scandinavian design.
