From Copenhagen… with love

By Caroline Rudge, Estate Operations Manager at Paradise Birmingham

Sticks ‘n’ Sushi is not just one of the most exciting restaurant brands in Europe – it has also marked the opening of its latest venue, right here in the heart of Birmingham.

Already responsible for more than 30 restaurants across the continent, the Danish-Japanese fusion of high-quality grilled yakitori, sushi and sashimi has landed at Three Chamberlain Square with a contemporary and welcoming space looking out onto Paradise Street.

Founded in Copenhagen more than thirty years ago before expanding into the UK and Germany, the brand operates some of the very best sushi restaurants on the continent and has now brought its unique take on Japanese food here.

Its new restaurant is open every day from 12pm to 11pm, serving lunch through to dinner and supper. Guests can enjoy sharing dishes of sushi, sashimi, salads and grilled sticks; available à la carte or in generous set menus, for both dine in and takeaway.

Popular dishes include mouth-watering Beef Tataki, beef fillet with miso aioli, truffle ponzu and artichoke crisps and Temaki Setto, DIY sushi rolls with lobster, wagyu tartare and avocado fillings.

From the grill, highlights come in the form of Gindara No Miso, miso-glazed black cod, Iberico Secreto; miso-cured black Iberian pork, and Ramu Niku, lamb with garlic butter, spring onion and soy sauce.

As well as the beautifully fresh and authentic food, there’s also an impressive drinks list that includes a range of Japanese teas, sake, cocktails, premium spirits and beer, including the brand’s own collaborative Japanese rice lager with Danish brewery Mikkeller which between them have created a drink that promises extreme refreshment.

Making the most of its landmark location, Sticks ‘n’ Sushi occupies one of the city’s most iconic commercial buildings, Three Chamberlain Square, a building that already stands as a fitting new neighbour to the Grade I, 1834 Town Hall opposite.

The new ground floor space is wrapped in glass on three sides, filling the restaurant with natural light, and includes its own private dining room for smaller, more intimate gatherings either for work-related or personal gatherings.

Joining the six restaurants already established across the Paradise estate, including Albert’s Schloss, Cow & Sow, Dishoom, F1®Arcade, La Bellezza and Rosa’s Thai, Sticks ‘n’ Sushi will bring another unique offer to a stellar list of successful venues in the heart of the city.

Brothers Jens and Kim Rahbek and Thor Andersen founded Stick ‘n’ Sushi in 1994 and haven’t stopped working hard to refine their offer and grow their business since then. The brothers say: ‘From the very beginning, Sticks ‘n’ Sushi has refused to be just another restaurant. The intention was always to be one of a kind. Today Sticks ‘n’ Sushi is just that and more – known for its great food and progressive attitude as one of the most innovative restaurant groups in the industry.’
